Ingredients
- 1 block extra firm tofu
- 2-3 cups vegetables, any combination
- Cooking from frozen works too! Check out the vegetable mixes or blends in the freezer section.
- 3 cups cooked grain, any type
- Some grains to try: brown rice, brown rice noodles, whole grain couscous, barley; cook per package instructions (1 cup dry = about 3 cups cooked)
- 2 Tablespoons cornstarch
- teaspoon garlic powder (optional)
- 2 Tablespoons canola oil, divided
- 11-14 ounces stir fry sauce of your choice
Peanut Sauce: (or use your favorite marinade or stir fry sauce)
- 1/4 cup smooth peanut butter
- 1/4 cup soy sauce or tamari
- 1/8 cup warm water
- 1 Tablespoon apple cider vinegar
- 1 Tablespoon brown sugar
- 1/2 teaspoon salt
